It is not a struffolo, nor is it a dessert. The struppolo of San Salvatore Telesino is a fried savoury speciality with a rounded or elongated shape, prepared with soft-wheat flour, yeast, eggs, extra virgin olive oil, salt and pepper.
Before being fried, every piece of dough is gently rolled over the woven surface of a wicker basket, giving it its characteristic ridged appearance. The preparation only seems simple: it represents knowledge carefully preserved and passed down by the families of the village.
From 4 to 6 September 2026, Piazza Salvatore Pacelli hosts the 24th Festa dello Struppolo, organised by the Pro Loco of San Salvatore Telesino. The three-day festival celebrates a speciality that was not traditionally part of everyday meals. Because of the amount of eggs and oil required, struppoli were mainly prepared for weddings and celebrations, becoming a symbol of abundance and prosperity.
The 2026 edition holds particular significance after receiving UNPLI’s national Sagra di Qualità certification, recognising the festival’s strong relationship with its territory and its commitment to protecting local products and traditions.
This year’s festival is also presented as a special Family Edition. Alongside struppoli and local country-style street food prepared by businesses and producers from the area, visitors will find live music, shows, street performers, puppet theatre, inflatable attractions and children’s rides.
A single recipe therefore becomes the starting point for telling the story of an entire community: its families, celebrations and culinary memories, which continue to be prepared, shared and passed on.

Throughout the festival, visitors can also enjoy Luigi Cofrancesco’s photographic exhibition “San Salvatore da amare”, inflatable attractions and children’s rides, and a market dedicated to crafts and decorative objects.
