It is not perfectly round, square or rectangular. Its shape changes every time, and this irregularity is precisely where the most authentic character of paccozza can be found.
From 9 to 11 August 2026, Piazza Umberto I in Pesco Sannita will host the eighteenth Sagra della Paccozza, an event created to preserve and celebrate one of the village’s most representative traditional dishes.
Paccozza is a fresh pasta traditionally made with durum wheat semolina, water and salt. Once kneaded, the dough is rolled into a relatively thick sheet, cut into strips and then divided into irregular pieces. Triangles, diamonds and many other shapes retain the unmistakable mark of handmade preparation.
Served with sauces rooted in family cooking, ranging from tomato to richer meat-based recipes, this pasta embodies knowledge handed down over time and transformed by the community into an opportunity to come together. The festival therefore celebrates not only a local speciality, but also the gestures and people who continue to make it.
Across three evenings, visitors can enjoy tastings, live music and a welcoming atmosphere in the heart of the village. The 2026 edition will begin on 9 August with a conference in the Council Chamber, followed by the official opening ceremony.
Irregular in shape and deeply connected to its place of origin, paccozza shows that the most genuine traditions do not need to be perfect to leave a lasting impression.
